I found a recipe for Crunchy Coconut Chicken on Pinterest (okay, Cointrin found it - I just repinned it like the copycat that I am), and I tried it as part of my mission to find meals that my daughter will actually eat. I am very happy to say it was a hit*! I love the crap out of this recipe.
*By "hit" I mean Whitney had two pieces before she told me she didn't like it anymore. Two whole pieces - that's practically a record.
I liked the the ingredients were a no-brainer to find at the grocery store (my experience with food is such that if it isn't ground beef or white sugar, I don't know what it looks like or what aisle to find it in), and the recipe was super easy in general. I had Whitney help me beat the egg mixture and stir the cornflakes and coconut. We both had fun making it aaand it was DELICIOUS. Sweet and chicken-y and perfect for my sugar-deprived self.
